Scrambled Tofu with Tomatoes
Many people that love to eat vegan also love the sulphuric smell that normally is to be found with scrambled egg. I hear you! And fortunately there is a solution to this: The scrambled tofu π
I have seen some "no egg" egg alternatives that are just-add-water-ready. However none of which I tried convinced me to move away from my lovely scrambled tofu. Let's see what the future brings but this dish is as classic and as good as it was years ago.
I know that some people have issues with its taste but please don't be scared off by the Curcuma in this recipe, you are not going to taste it π§‘

Ingredients
- 200g Tofu
- 1 Onion, cut in small pieces
- 80g of Tomatoes, cut in pieces
- 1tsp Curcuma
- 1/2tsp smoked Salt (optional)
- 1 tsp Kala Namak (small, not heaped teaspoon)
- Pepper
- 3tsp plant joghurt (neutral taste)
- A bit of additional spices e.g. Chives and/or Parsley

Instructions
- First mash the tofu into small "scrambled egg" pieces (works well with a fork or simply by tearing it apart with your hand)
- Put the mashed tofu aside
- Add some oil in the pan and start frying the onion on medium level for 1min
- Add the tomatoes to it and fry another minute so that the tomatoes become a bit mushy
- Now add the tofu together with the curcuma and fry for 1-2mins (it will turn into a very nice egg-like color after 2mins)
- Add the smoked salt, the Kala Namak and your additional spices of choice (see ingredients)
- After all add the joghurt to make it even more mushy and for it to be a taste carrierπ
- After some more stirring the Vegan Scrambled Egg Alternative should be ready to serve - add some pepper spice on top π
